Lean or fat

The fact that our bodies are not fixed but rather evolving is something we take for granted. The same body can be thin, or fat. Lean or muscular.
We inherited our bodies from our ancestors and the genes that made our bodies have survived through the ages and refined over millennia to be the best version of us. 
Which body are we meant to have?
Did they hand us a thin body or a fat one? Lean or muscular?
The same genes seem to lead to completely different outcomes, depending on our lifestyles.
I try hard to understand how we got here, and how we come to be, and how we ended up where we are, and if I close my eyes and try real hard I can just about make sense of it.
Almost.
Except for the part where we have bodies that are completely blank pages. We have this canvas and what we make of it is completely up to us. This does not line up with the animal world, as Lions and baboons have a very consistent body type
The difference appears to be the lives we live.
Those who are fortunate enough to work the land will find that they end up with a similar well-toned body. Those who sit at desks eating pizza another type altogether.
Seeing as the desk job could not have been a part of the evolutionary design I assume that we are in uncharted terrain here
The brainpower required for the desk job is part of the evolutionary package was meaningless to our caveman ancestors, so why did we develop those obscure skills.
They say the part of the brain that handles advanced calculus is dedicated to that function. It lies dormant till we are exposed to calculus. So what other parts of our brain are lying dormant, waiting for some future science to unlock it. And most of all how did evolution know that this would be a requirement in the future.?
